Mom’s Homemade White Castle

As the world’s pickiest child eater, I drove my entire immediate and extended family insane. I ate like five things:

  1. Mashed potatoes

  2. Cereal

  3. Meat Loaf

  4. Breakfast food

  5. These sliders

Mom used to make these on special occasions, plus extra to keep in the original bag in the fridge and heat up in the microwave. This is one of the few foods that’s even better reheated in the microwave. Even later, as a snobby unbearable food type, these things hit the spot like almost nothing else. So I asked Mom to walk me through it on a visit.

It was awesome, and one of my most popular pieces yet.

We lost Mom just over two months later, almost completely out of the blue. Hug your mom. Get her to tell you about the things you love and share. I’m glad, at least, for that.
