Pepper Mash Your Smoked Pork

My best recipes come from eating something on vacation and then obsessing over it until I can get back home and try to replicate it. This one’s a technique from down South so easy, it’s quite nearly cheating. Smoked pork is easy, but can be pretty plain by itself. Add some fermented pepper mash to the party and it takes on an incredible depth of flavor.
