Italian Beef is one of those really delicious things you never, ever make at home. Which is fair — it’s a big-ass roast, cooked over a very long time, then sliced with equipment almost nobody has at home. But thanks to the magic of food science and … well, the deli … I managed to come up with a cheat version that I really wish I would have had in college.
